Mainstay Provisions is the creation of Thom Koschwanez and Ashley Thompson, two Seattleites looking to build a café to meet the busy lifestyles of working locals and longstanding Ballard residents. Parents of a 3 year-old themselves, Koschwanez and Thompson are finding the balance between family and owning a new business. Their goal is to provide high quality food and market items at affordable prices, while providing an atmosphere for chefs, cooks, and staff to succeed in the industry without having to sacrifice a work/life balance with a family. Koschwanez, an Ethan Stowell Restaurants chef alumnus, has been in the industry for over 25 years.
Our menu features soups, sandwiches, salads, and rotisserie chickens all prepared in house with unique ingredients curated to highlight techniques one usually reserves for fine dining, but prices one hopes to find at their corner store. The market selections are chosen in the same manner - a collection of local and international beers and wines, alongside specialty oils, vinegars, and other specialty items running the gamut of price point and selection. Our house made breakfast pastries and desserts pair beautifully with our Ladro Roasting espresso beverages.
